Blauer Burgunder

As for the whole Thermenregion the Pinot Noir is a very important red grape variety for us as well and accordingly we try our best each year to process the purchased grapes as gently as possible to bring the perfect character of the variety into the bottle.

A gradation of 20 KMW provides body, maturity, and thereby also the fruitiness. We leave the grapes on the skins for several hours to make a cold maceration! The acidity is adjusted by BSA and we store the wine exclusively in steel tanks. So we get a perfect wine with a pure beautiful fruit reminding of cherry and other red berries year after year!

General information for the Blue Burgundy

The Blue Burgundy has several synonyms, known in France as Pinot Noir, he is known in Switzerland and in Germany as Spätburgunder. It is one of the finest red wines and brings ruby red, full-bodied wines with very fine and smooth taste. The Blue Burgundy often reached its climax at the age of 2-5 years. Its bouquet reminds a bit like raspberries and almonds and the vines need only the best climate and soil!

BSA: Malolactic fermentation - by the addition of starter cultures (bacteria), the malic acid, a part of the total acid in wine, is largely reduced to lactic acid and CO2. Thus, the total acidity is reduced, and in addition it gaves the wine richness and complexity.
